COLD BREW COFFEE

A friend of mine turned me on to the toddy coffee brew system while on a baja surf trip.  I've since bought my wife one for christmas and she loves it.  Here's the scoop in 1964 a chemical engineering graduate of Cornell,  Todd Simpson developed and patented a cold brew system for coffee.  The toddy system creates a superior cup of steaming hot or ice cold coffee.  Toddy coffee contains 67% less acid then coffee made by hot brew systems.  You get a bold yet smooth tasting cup of joe that is easier on you stomach.  It takes a while to brew but one pot goes a long way.  Brewing is simple, soak 1/2 a pound of coffee in 9 cups of water for 12 hours the pull the drain plug and drain into carafe.  This yields a concentrate of coffee, pour 3 or 4 ounces of concentrate into mug add hot water or add ice and cold water and enjoy.  One pot of  toddy will last up to 2 weeks without loosing freshness.  It takes my wife about a week and a half to drink a pot of toddy so she doesn't have to brew coffee every morning.  check out the website for more info  click here
